Spicy Masala Chicken Stir Fry

ย  ย  It’s always a dream for a cook, to toss like an efficient chef in a wok while cooking. I like stir fries and I love to prepare them in wok, but am not at all an expert in tossing, most of the time accidents happens. So I toss very slightly always & satisfy myself. I bought new wok & as soon as I reached home,ย I couldn’t wait for the other day for the inaugural cooking in the wok. Soon I decided to make this spicy masala chicken stir fry which was so delicious and served as dinner!!!

For Marination
Chicken Breast-1.5lb
Turmeric pdr-1/2tsp
Coriander pdr-2tsp
Red chilli pdr-1 1/2tsp
Garam masala-2tsp
Black pepper pdr-1 1/2tsp

For Stir Fry
Coconut oil-3tbsp (divide)
Onion chopped-1/2 (divide)
Ginger garlic paste-2tbsp (divide)
Green chilli-2 (optional)
Garam masala-1tsp
Black Pepper pdr-1tsp
Veggies-broccoli,beans,bell pepper,corn,carrot (can add any veg that stays dry in stir fry)
Soy sauce-4tbsp

For Marinaion
Marinate the chicken with all the ingredients and keep aside atleast for about 1hr (cover and keep refrigerated).

For Stir Fry
In a wok, heat oil & add the half of onion, ginger garlic paste & saute till golden brown in color.
Add in marinated chicken, cook and roast them (dry).
Keep tossing and as the chicken get cooked and dried, crack in an egg & stir fast to coat the chicken with egg.
Transfer it to a bowl & in the same wok heat oil and add in the onion, ginger garlic paste, green chilli, saute.
Add the garam masala, pepper, check for the salt, roast for few seconds & add in carrots, beans followed by broccoli, bell pepper & corn (just half cook, don’t overdo).
Add the chicken & drizzle the soy sauce, toss toss for few more seconds.

Delicious dinner is on the table, just go and grab them!!!
