Light Fruit Cake (Non-Alcoholic) – Merry Christmas!

ย  ย  First of all, Advance Merry Christmas to all my readers. Most of us have some favorite cakes all the time, but for Christmas there is just a common choice for all of us that’s the Fruit cake. Christmas is all about Fruit Cake, every year we usually give the fruit cake treat to our neighbors in our hometown & we too get lot of fruit cakes from others. Whatever dishes you cook for Christmas, Fruit cake is a part of tradition & of course first in the party menu. Here I have made light fruit cake with no alcohol, since we have party on Christmas day in our home & we have kids coming over, so no alcohol. Ingredients:-
For Soaking
Dry fruits-fig, dates, cranberry (all about 1cp)
Nuts-almond, cashew, pistachio (all about 1cp)
Prune Juice-to soak
Orange zest-1tbsp
Lemon zest-1tbsp
Spices (nutmeg/cinnamon/cloves)-1tsp

For Cake
Flour-2 3/4cps
Baking pdr-1 1/2tsp
Salt-a pinch
Butter-1 1/2cp (room temp)
Egg-5 (room temp)
Brown sugar-1 3/4cp
Vanilla essence-1tbsp
Orange zest-1tbsp
Lemon zest-1tbsp
Spices (nutmeg/cinnamon/cloves)-1tsp

Method:-
For Soaking
Chop the big size fruits and nuts.
Combine all the ingredients in a container (pour juice till the fruits get covered).
Cover tightly & keep it aside for 1 day (bcz it’s fruit juice).
Note:- You can soak in any juice that goes well in taste, but don’t use any pulpy juices which will be harder for the fruits to soak in, especially you are soaking only for one day.

For Cake
Preheat oven at 300 F.
Butter and line the baking tray with parchment paper & Keep it aside.
In a mixing bowl sift in dry ingredients flour, baking pdr, salt, spices.
In a large mixing bowl cream butter & sugar till light and fluffy (for about 7-8mins).
Add the eggs one at a time & beat well after each addition.
Splash of vanilla.
Add both the zests & mix mix mix.
Drain the soaked fruits (it will be good if you squeeze out the juice little more).
Add the fruits to the dry ingredients & coat them with the flour mixture.
Add the flour nut mixture to the wet ingredients in few batches & whisk well.
Make sure no dry flour is remaining in the end.
Transfer the batter to the tray and bake for about 1 1/2hrs.
Check with the toothpick inserted.
Let it cool completely to room temperature as the heat incorporated cooks the cake more perfectly.
