Burrito bowl is a Mexican food. This cold bowl is very attractive by colors. Burrito bowl is a good choice for busy working people for their weekdays meal. It is very time saving food. Keep each ingredients ready separately in the refrigerator and combine when you are ready to have. The most attractive quality of this food is, it is healthy and filling, one Chipotle burrito bowl is quite hard to finish at a time.
Am looking ahead to make this Burrito bowl for one week meal, once our parents leave to India. Now these are busy days trying out different foods at home & out and we will be burning these extra fats by sticking with the one week burrito bowl meal prep. I have seen lot of people got reduced weight & still fit by following these meal prep. You can also stay fit and healthy with this colorful bowl!!!
Ingredients & Method:-
Lime rice- Cooked 2 cps of white rice with 1 1/2 lime juice and salt.
Beans- I took 1cp rajma for the better nutrition, can take any beans as per your taste.
Corn- 1 cp of frozen corn.
Lettuce & Green bell pepper- Cut into lengthwise.
Chicken- Marinated about 2lbs of boneless chicken with salt, black pepper, garam masala and vinegar. Baked them at 350 F for 45 mins. Take out of the oven & shred the chicken pcs with fork.
Salsa- Chopped 1 medium red onion, green chillies as per need, 1 big green bell pepper, 3 big tomatoes, 1/4 cp of apple cedar vinegar & salt. Slightly bring to boil in high flame, then flame off.
Sour cream- A scoop in each bowl.
Combine all the above separately in each bowl. Chicken and rice will be dominating in the bowl compared to all others. It is completely fat free and sauce free version of burrito bowl, so that considered to be very healthy.
