It was a long chapati week for us. Chapati is Ayden’s favorite food, but I make them very rarely because he won’t eat anything else with chapati, just plain chapaties. And it’s hard to feed him some vegetables or non veg. So I gave him chapaties for few days and I have stopped chapati menu for now. This Carrot Thoran Rice is very delicious and especially kids will love this. It’s an easy recipe for lunch box, can prepare with leftover thoran. We had the rice with fish fry and raita, that’s just more than enough and perfect combo. Try my recipe and share with your loved once.
Basmati rice-2 1/2cps
Turmeric pdr-1 1/2tsp
Black pepper pdr-1tsp
Heat ghee in a container, add all the whole spices and let them get roasted.
Pour in lot of water (will drain excess water) & bring to boil.
Add salt, lime juice and washed rice.
Cook the rice only 95% & drain the excess water.
Spread the rice on a wide plate to cool down and set well (wide plate helps the rice cool down faster and evenly or else the bottom rice will be mushy because of the warm and holds the water too).
Rice part is done.
Heat oil in a pan, splutter mustard seeds.
Add in onion, ginger garlic paste, green chili and saute till golden brown color.
Add the salt and turmeric pdr and saute a bit more.
Add chopped carrots (used chopper), mix well.
Pour little water and cook covered for about 6-8mins.
Take the lid and let water get evaporate completely.
Add coconut and cook for few more seconds.
Check for salt.
Combine both rice and thoran, be careful while mixing just fluff them slightly and ready. Thoran will spread it’s yellow color to rice too.
